    Trentino's Vino Santo is produced only in the municipalities of Madruzzo, Cavedine, Padergnone, and Vezzano with Nosiola grapes from hillside terraces (“fratte”), not below 600 meters of altitude. It is made by drying the bunches on racks (“arele”) for about 6 months. What makes this wine unique is the Botrytis cinerea, the “noble mold” that grows on the berries during drying. The crushing takes place during Holy Week, never before March 1st: from 100 kg of grapes, less than 20 liters of must are obtained. Maturation occurs in wooden barrels for at least 48 months (according to regulations), but the few remaining producers aging this nectar wait at least 7 years, many even 10. Today the Vino Santo winegrowers association passionately works to carry on this tradition.
