Das Restaurant Proteus liegt mitten in Postojna in Slowenien.
Das Restaurant ist nach dem Grottenolm (lat. Proteus anguinus) benannt, der in der Postojna Höhle lebt und steht unter demselben Management wie die Schauhöhle. In dem traditionellen Gebäude werden gesunde Gerichte und kulinarische Köstlichkeiten zubereitet. Es gibt Tagesmenüs als auch Spezialitäten der lokalen Küche. Im Restaurant Proteus lohnt sich ein längerer Aufenthalt. Von der Vorspeise bis zum Dessert ist das Essen hier köstlich. Auch für feierliche Anlässe ist das Restaurant geeignet, die Einrichtung ist sehr edel.
