Der Natur nichts Zusätzliches hinzuzufügen und dem Bier nichts Natürliches nehmen.
Alles begann mit zwei Reitern. Nach einem Wanderritt begegneten sie einem passionierten Braumeister, der für sich und seine Freunde daheim naturbelassenes Bier braute und die Reiter auf ein Bier einlud. Nach dem ersten Glas sagte der eine: „Seit Jahrzehnten habe ich nicht mehr so ein Bier getrunken!“ Und nach dem dritten Glas sprach der andere: „So lass auch uns Bier auf diese Weise brauen!“Aus den zwei Reitern wurden vier Weggefährten, aus der Idee wurde eine Vision und aus der Vision die Wimitz Privatbrauerei. In den Wimitzgraben hat uns die Suche nach der Grundlage der Vision vom gefährlich ehrlichen, unverfälschten Biergeschmack geführt. Perfektes Quellwasser zum Brauen – sauber und sehr weich. Abgeschieden, inmitten unberührter Natur, wird hier nördlich von St. Veit seit 2011 mit viel Leidenschaft völlig naturbelassenes Bier gebraut.
