On the rocky plateau, the old Monks' path crosses a subtle landscape. Crops, groves, vineyards, paths, and traditional buildings make up the harmonious and bright composition of a small-scale landscape.

A monastic path
Clearing a formerly forested Tarn did not only reveal rich lands but also nearly barren places called "èr m" (wasteland). Like l'Herm, near Mouysset.
Who cleared? The monks to a large extent.
The Hauterive monastery (near Castres) was one of the first, in Gaul, to apply the Rule of Saint Benedict. While it notably advised monks not to "spread outside," they quickly made exceptions to gain land from the forest and cultivate it. The monks of Bonnecombe Abbey, in Rouergue, thus cultivate around their barn in Bernac (south of Castanet) and use, for six centuries, the famous "Monks' path" to transport anise, cereals, coriander, pastel, and saffron.
