Belle reconversion pour cet ancien fief des Comtes de Comminges, ravagé en 1355 par le fils du Roi d’Angleterre – le Prince noir, lors des guerres de cent ans – et par les protestants en 1589 !
À voir également : maisons à colombages du XVIIème bordant la place François de Belleforest (1530-1583), historien, poète, traducteur et cosmographe né à Samatan.
La Fontaine de 1843, qui servait d’abreuvoir, est devenue le symbole de Samatan et est inscrite aux Monuments Historiques.
L’église Saint Jean-Baptiste, reconstruite dans un style purement néo-gothique en 1890, abrite une relique de Sainte-Apollonie (invoquée contre les maux de dents), une chaire classée avec une rampe réalisée par Bertin, maître ferronnier natif de Samatan, et un orgue classé de Callinet et Daublaine.
Le moulin, dont le canal traverse Samatan, a été l’une des premières usines électriques du Gers et alimentait la ville de 1897 à 1951.
