Bodenfunde weisen frühes menschliches Leben im Heimatraum nach (Steinbeil aus der Jungsteinzeit, Hügelgräber aus der Hallstattzeit und Reihengräber der Alemannen). Vom Römerkastell im benachbarten Kellmünz führte eine Römerstraße durch die Gemeindeflur. Die Ortsgeschichte lässt sich bis in die karolingische Zeit etwa um das Jahr 819 verfolgen. Lehensbriefe Kaiser Ludwig des Frommen an die Klöster St. Gallen und Reichenau erwähnen Pleß. Im Jahre 838 entsteht ein Tauschvertrag zwischen Graf Wanning vom Illergau und Abt Tatto vom Stift Kempten, in welchem Plezza (Pleß) als Handelsobjekt bezeichnet wird. Starken Einfluss übt im 9. bis 10. Jahrhundert das Kloster Kempten (Kirchenpatrone Gordian und Epimachus) in Pleß aus. Im 12. Jahrhundert wirken als Ortsadel in Pleß die Dienstmannen des Klosters Ottobeuren. Bis ins 15. Jahrhundert sind der Ortsadel und einige Memminger Patrizierfamilien Besitzer des Dorfes. Von 1547 bis 1790 ist Pleß im Besitz der Fugger, danach bis 1803 (Säkularisation) im Besitz der Kartause Buxheim, unter deren Förderung bereits 1766/67 die prachtvolle Pfarrkirche entsteht. 1806 brachte die Mediatisierung der Grafschaften und Fürstentümer Pleß an das Königreich Bayern. 1818 erfolgte die Einführung der Bayerischen Verfassung und des Gemeindeedikts, wodurch dem Gemeinwesen größere Eigenverantwortung übertragen wurde. Die beiden Weltkriege hinterliesen auch in Pleß ihre Spuren. Vertriebene und Flüchtlinge vermehrten die Einwohnerzahl in den Jahren 1945/46 von 800 auf 1028. Die Jahre des Wiederaufbaus brachten die Sanierung von Straßen und Kanälen, den Neubau von Mehrzweckhalle, Pfarrhof und Wohngebäuden, sowie die Lösung der Schul- und Kindergartenprobleme. Die 1978 durchgeführte Gebietsreform ließ Pleß die kommunale Selbständigkeit.
