In autumn, the island is buzzing with life, since almost all the locals are engaged in “liomazoma” (olive picking). The koroneiki variety is grown to produce olive oil while table olives come from the local “matsa” (cracked or salt-cured) and karidolia” or the “kalamata” varieties. Olive dreg is still used today for the production of handmade soap.
